| Years ago, I made a peach cobbler using canned peaches and lemon pudding mix. You don't drain the peaches, hence the pudding mix thickens...had a bisquick topping. HUGELY FAMOUS with my crowd. I can't find the recipe to save me. Been all over Yahoo search, Bisquick, bettycrocker.com, jello.com etc........nadda. We're talking 70's here, people~
I made it this weekend, used tapioca instead of pudding (I accidentally bought Instant Lemon Pudding mix instead of the stovetop version..)........turned out reallly good!!
1 15oz can peaches, do not drain! 2 T tapioca 1/4 c sugar 1/2 tsp cinnamon 1/4 tsp nutmeg
1 c Bisquick 1/4 c milk
2/3 c ricotta or sour cream 1 egg
In a small 8x8 casserole dish, pour peaches, juice and all, add tapioca. Mix sugar, spices together and pour on top of peaches, mix all together. In a seperate bowl, whip together Bisquick, milk together. Drizzle over top of peaches to edges, spreading carefully but not mixing in. Whip ricotta and egg together. Using a spoon, dollop over top of bisquick topping, making 3 ribbons lengthwise down the cobbler. Bake 30 minutes in a 375 oven. Serve warm with Vanilla ice cream. Serves 8. (or 4 if you don't invite guests!!)
This is also good using a yellow cake mix, follow directions on the box and use 1 large can of peaches - make in a 9x13 pan and adjust bake time accordingly. Serves 10-15. _________________ Mr and Mrs Mhorses |
